I know one of the hardest things about becoming plant based for me was where do I start. I am sure many people feel overwhelmed just like I did. I wanted to make the transition after watching Forks Over Knives almost 2 years ago but I was just scared. I thought, ugh I am going to have to eat only salads... you know, rabbit food!
But some how about 8 months ago I found the Happy Herbivore. I first purchased Everyday Happy Herbivore, Happy Herbivore Abroad along with the Forks Over Knives cookbook. But they both sat unused on my shelf until November 2013. I decided to make the change. I had some great recipes in front of me and was going to start using them. I got Happy Herbivore Abroad for Christmas and purchased The Happy Herbivore Cookbook for my birthday present.
Lindsay Nixon, the creator of Happy Herbivore, has a great website for meal plans. She gives you a complete menu, shopping list and recipes for an entire week of meals for an individual or family. I started buying those and ate from them for a few weeks. And being vegan was awesome. I wasn't hungry. I ate a ton of food and I was satisfied. Plus I lost a few pounds.
So I started digging into her cookbooks. I noticed that I was cooking from scratch for my family, using real ingredients and not using packaged, anything! I prefer her books over the Forks Over Knives cookbook because you don't have to be a chef. My father used to be a chef, so when my chefty side needs to come out I go to that cookbook. Her ingredients are easy to find and most meals are on the table within 30 minutes.
I urge you to get her books. If you need a place to start this is the best one. My husband and kids love her food and I am so happy to serve them something that is healthy, fresh and homemade!
